I'm a huge fan of chicken tortilla
soup because it's healthy and it tastes good! That's a hard combination to find. I'm also a fan of easy cooking. There are some days when I actually like to stay in the kitchen and spend my time cooking, but most days, I want something I can throw together in a jiff.
That's why I love this recipe. You pretty much throw everything in the crock-pot, and let the magic happen on it's own. This recipe makes a pretty large batch, so it can last you the rest of the week.

Ingredients
- 1 rotisserie chicken
- 2 cans of chicken broth
- 1 can of corn
- 2 cans of black beans
- 2 cans of Rotel
- 1/2 white onion
- 2 limes
- 1 jalapeno (optional)
- taco seasoning

Directions
1) Chop the onions up finely and throw 'em in the pot. If you like spicy (like I do) chop up the jalapeno and throw it in too.
2) Add Rotel and Broth to the pot.
3) Drain the corn and add to the pot
4) Rinse the black beans and add to pot
5) Shred 'white meat' from the chicken and add to pot. (You can save the dark meat for other food adventures)
6) Add a pinch or two of taco seasoning
7) Let the soup set on low for 8 hours, or high for 3-4 hours.
8) It's ready! Squeeze the lime into the soup.
9) You can top with tortilla chips, avocado and cheese.
